The Locavore's Winter Holiday Guide
Holiday feasts taste even better made with local ingredients, and they are a great way to introduce friends and family to local foods. Even if you're just bringing one thing to the the party (a bottle of local wine, perhaps?), here are a few tips on where to find the best local treats for the season.

100% Local Cranberry Sauce
Makes approximately 3 cups
12 ounces fresh or frozen cranberries
1/2 cup water
1/2 cup honey
3 Tbsp. maple syrup
1 apple, cored and finely chopped
Combine all ingredients in a medium sized pot over high heat, stirring to dissolve the honey. Continue cooking over high heat until most of the cranberries have popped, about ten minutes. Spoon into serving bowl, cover, and refrigerate at least two hours before serving. Alternatively, ladle into clean half pint jars leaving half an inch head space, cover, and process in a boiling water bath for ten minutes.
Note: traditional cranberry sauce relies on sugar to help it "set". Honey does not have the same gelling power, and the smaller-than-usual quantity of water in this recipe compensates for that.
